Chicken Pot Pie Casserole

I have been really craving chicken pot pie.  Just last week we had Chicken Pot Pie Stew (which was fabulous!) and tonight I decided to make Chicken Pot Pie Casserole instead of the planned Chicken and Dumpling Casserole.  Maybe it is the KFC ad that is getting to me.  Who knows, but  lets have some chicken pot pie!













Chicken Pot Pie Casserole adapted from Deep South Dish
3 chicken breasts, cooked and shredded
2 cups chicken broth
1/2 cup butter, melted
16 oz frozen mixed vegetables
2 cups Bisquick
2 cups milk
1 can cream of chicken soup
1 tsp parsley
1/2 tsp pepper
1 tsp poultry seasoning
  • It is important to take note and not mix anything when you build the layers
  • Place melted butter in a 9x13 baking dish
  • Place shredded chicken on top of butter
  • Top with mixed vegetables
  • Sprinkle the vegetables with parsley, pepper, and poultry seasoning
  • In a small bowl mix together milk and Bisquick then gently pour over the chicken and vegetable mixture taking care not to disturb the layers
  • In a small bowl whisk together the chicken broth and soup then pour over the Bisquick layer, once again pour slowly so you do not disturb the layers
  • Bake in a preheated 400 degree oven for 35-45 minutes or until golden brown 
This is a great one dish meal!  It is simple to make and incredibly comforting!  You definitely want to give this one a try...especially if that KFC pot pie commercial is getting to you ;)
