Beef Tips & Noodles

This is one my family's favorite meals.  There are rarely any leftovers (even if I double the batch).  It is super simple to make, even my husband can make it ;)  I also like how versatile it is.  You can serve it over mashed potatoes or with noodles and you can even throw in some sour cream or cream cheese at the very end (when it's off the heat) to make it more like a stroganoff.  Try it and I am sure you will fall in love with this recipe!



Beef Tips & Noodles

2 lbs cubed beef (any cheap cut will work)
1 TBS minced garlic
1 small onion, diced
2 TBS olive oil
1 cup beef broth
1/2 cup red wine
2 TBS cornstarch
1 can cream of mushroom soup
1 can mushrooms
1 packet beefy onion soup mix (plain onion soup mix works fine as well)
16 oz egg noodles (mashed potatoes or whatever you have on hand)
  1. Preheat oven to 300 degrees
  2. Brown beef in 2 TBS oil and season as desired (I used pepper, onion powder, garlic powder)
  3. Remove from pan.  Add onions and saute until onions are translucent
  4. Add garlic and saute for about 1 minute 
  5. In a small bowl combine broth and cornstarch
  6. Add beef broth, wine, cream of mushroom soup, onion soup, and mushrooms to the skillet.  Bring to a boil and reduce for approximately 5 minutes.
  7. Combine soup mixture and beef and place in a casserole dish
  8. Make sure the beef is coated well, cover, and bake in a preheated oven for 2 hours NO PEEKING!
  9. Uncover, stir, and continue to bake for another hour
  10. While beef is cooking prepare noodles as directed on package.  Serve beef and sauce over noodles. 
****NOTE****  This can also be done in a crock pot.  After you have reduced the soup mixture mix all the ingredients in a crock pot and cook on low for 6-8 hours, this is how my husband usually makes it.

One of my favorites.  This is such a comforting meal.  Beefy and hearty :)  Well worth the time and effort!
