Shopping Break

No shopping for me this week. I know I just took a week off, but I need to start working towards using my food up right now. We may be relocating very soon and I don't want there to be any waste from opened packages, bottles, etc. So for the next few weeks I will be necessity shopping (milk, produce, etc) instead of coupon shopping. Since I won't have any ad match-ups or savings deals to pass along I will try to be better about adding coupon and freebie deals that I find. If I notice a super great deal I will try to pass those along as well. Happy shopping everyone and hopefully I will be back on track again soon!

A Little Bit About Me :)

I am a mom who works full-time with two kids, my daughter is 9 and my son is 2 (soon to be 3 in August!!!). My husband and I have been married since 2002 and we moved from Michigan to Florida in 2006.  Within the last year my husband and I have realized the climbing costs of everything with the lack of any increase in our income was going to catch up with us if we did not take some action to gain better control.  I began couponing and working towards saving money on one of our biggest expenses, groceries.  We estimated we were spending anywhere from $750-1000 per week on groceries alone!  Now I spend approximately $300-350 per month.  Now if I could get the little one out of diapers I could cut that even more (boys are stubborn LOL).  My goals are simple:
  1. to spend less than $100/week
  2. to keep my yearly spending under $5,000
  3. and to save 50% each week
So far I am on track.  There are weeks that I may not save as much or that I have actually busted my budget, but I am still on track to meet my yearly goal (which is most important to me).  I set the other goals to help keep me on track to reach my long term goal.  I can see the improvements since I began couponing almost a year ago and I hope to continue to improve so I can set more aggressive goals for next year! 

Cherry Crisp

Since cherries are on sale this week for $1.99/lb in many locations I thought I would share this simple, easy, and delicious recipe I found.  I used my leftover fresh cherries from last week, but if you wanted to make it simpler or you have cherry pie filling go ahead and substitute a can of filling or even frozen cherries if you would like. 





Cherry Crisp

Filling:

4 cups Pitted Cherries

¾ cup Sugar

½ cup Water

2 ½ Tablespoons Cornstarch



Topping:

1/3 cup Packed Brown Sugar

1/3 cup Oats (can use pecans or walnuts as well)

 ½ cup Flour

1 teaspoon Cinnamon

4 Tablespoons Butter



1.       Mix cherries, sugar, water, and cornstarch in a saucepan.  Bring to a boil over medium heat and then reduce to a simmer.  Continue to simmer uncovered for 10 minutes.

2.       While cherries are simmering mix brown sugar, oats, flour, cinnamon, and butter to form a crumbly mixture.  I use my fingers to blend and then mix it with a fork to break the crumbles up a little.

3.       Grease a 9x9 baking dish and pour cherry mixture in the dish.  Sprinkle topping over the cherries and then bake for 20-30 minutes or until bubbly and topping is browned in a 375 degree oven. 



We like to top ours with whipped cream!  You can always top with vanilla ice cream or eat plain.  Whichever you and your family prefer J


A Break from Shopping...kinda

There is no shopping trip planned for me this week.  I am taking the week off from grocery shopping.  However, you probably will still find me shopping at Target tomorrow ;)  They have a couple of items I am wanting to get, but they have nothing to do with grocery.  Books, video games, and toys!!!  Target has some great clearance on toys and I have already picked some up for Gavyn's birthday next month, but I want to see what else they have.  Target also is giving $5 giftcards wyb 2 book club packs so I am hoping they have something that I would be interested in.  Also there are some Wii games I want to look at for birhtday and Christmas gifts too.  Hope everyone has a good week and happy shopping!

Couponing Ethics

Tater Tot Casserole - Dinner on a Dime


Tater Tot Casserole

1 lb Ground Beef $2.00
1 bag mixed veggies (or green beans, corn, whatever you and your family likes) $0.14
1 Small Onion $0.79
1/2 Green Pepper $0.45
8 oz Shredded Cheese $1.50
1 bag of Tater Tots $1.73
2 cans Cream of Mushroom Soup $1.90
  1. Brown ground beef and season with salt, pepper, and garlic.  Add green pepper and onion.  Cook until beef is no longer pink and drain.
  2. Mix soup, veggies, and beef until well blended.
  3. Layer meat mixture in a 9x13 pan.  Top with cheese and tater tots.
  4. Bake uncovered in a preheated 375 degree oven for 25-35 minutes or until cheese is melted and tater tots are golden brown. 
This is a simple one dish meal and is very kid pleasing :)  My kids like to top theirs with ketchup.

Sausage and Pepperoni Baked Penne - Dinner on a Dime


This is a quick, easy, and flavorful meal that we like in our household during a busy week.  Today it has been really rainy and dreary so I decided to make this to fill our bellies for dinner :)

Sausage and Pepperoni Baked Penne

1 lb Italian Sausage  $2.50
4 oz Sliced Pepperoni  $1.50
1 Package Penne Pasta  20 cents
1 Jar of Spaghetti Sauce 73 cents
1 Package Italian Blend Cheese  $2.00
Optional Veggies (choose anything you like green pepper, onion, zucchini, black olives, etc)
  1. Thoroughly cook sausage.  Drain and add pasta sauce, veggies, and pepperoni.  Simmer on low.
  2. While heating the meat mixture cook pasta as directed on package.  Drain and mix with meat mixture.
  3. Place in a casserole dish and top with cheese.  Bake for 20-30 minutes in a 350 degree oven or until cheese is melted and sauce is bubbly. Enjoy!
We served ours with a side salad and garlic bread to round off the meal!

Total Cost:  $6.93
Cost per Serving:  87 cents (This makes a lot so feel free to scale it down by cutting the pasta, sauce, and cheese in half)

English Muffin Pizza - Dinner on a Dime



These are incredibly versatile and easy to make.  You can add whatever toppings your family enjoys and can even use bagels, tortillas, or bread instead of english muffins.  These can be made for a super easy quick dinner (just add side salad and some fruit or veggies on the side to round off the meal) or a quick snack. 

English Muffin Pizza's

1 - Package English Muffins $1.45
1/2 Package of Shredded Cheese (we used Kraft Italian Blend) $1.50
12 slices of Pepperoni (or any other toppings you like sausage, chicken, green pepper, mushrooms, etc.) Approximately $1.00???
Pizza Sauce $1.59

  1. Line a cookie sheet with foil and place split english muffins on the cookie sheet.
  2. Place sauce on english muffins, then cheese, and toppings (We sprinkle dill on ours no idea why, but my grandma always did and it is really good!)
  3. Place under broiler for approximately 2 minutes or until cheese is melted ENJOY!
Total Cost:  $5.54 or 93 cents per serving!
