Dinner on a Dime


Black Beans and Rice

1 - 15 oz can Black Beans
1 - 5 oz bag of Yellow Rice (ie. Vigo)
1 - 8 oz can Tomato Sauce
1/2 Cup Diced Onion
1 TBS Minced Garlic
1 tsp Salt
1/4 tsp Pepper
2 tsp Oregano
  1. Drain and rinse black beans.  Place in pot and add enough water to just cover beans.  Heat over medium heat
  2. Saute Onion and Garlic in butter until onion is translucent.
  3. Add veggies to beans and add tomato sauce, salt, pepper, and oregano.  Continue to cook covered over medium heat 30-45 minutes.
  4. Prepare rice as directed on package.
This is a great easy dish that can be modified in many different ways to your liking.  Add green pepper to the saute of onions and peas to the rice.  You can also used dried beans instead of canned if you prefer.  Below is the price breakdown for this super simple meal.

1 can Black Beans $0.80
1 can Tomato Sauce $0.20
1 Bag Yellow Rice $0.50
1 small Onion $0.60

Total Cost: $2.10 or 53 cents per serving!
